Mochi is a wonderful traditional dessert from Bandung, West Java, Indonesia which made from glutinous rice flour. Today, I filled this gooey mochi dough with almond nuts. It’s fairly easier than you would think. So, let’s gonna try!
Ingredients:
Mochi dough:
- 200 gr glutinous rice flour
- 300 ml coconut milk
- 50 gr sugar
- 50 gr cornstarch
Filler:
- 15 almond nuts
- 3 tbsp refined sugar
- 2 tbsp hot water
Methods:
- Make the filling: Roast the almond nuts until brown. Mash it finely. Then, mix it with refined sugar and hot water.
- Make the mochi dough: Mix glutinous rice flour, coconut milk, and sugar. Steam the dough for about 20-30 minutes. Then, put the steamed mochi dough into a container filled with roast cornstarch.
- Cut the dough into 20 small mochi balls.
- Flatten the mochi ball and place the almond filler in the center. Pinch the mochi over the almond filler until the almond filler is completely covered.
- Sprinkle with additional cornstarch.
- Then, repeat until all the mochi and almond filler is used.
